Tasty Mother's Day Brunch Recipes
Brunch is a traditional Mother’s Day meal and it’s so well timed. A late morning or early afternoon brunch means Mom has time to relax in the morning, enjoy her coffee, and maybe even open her gifts.
Preparation is Key
Brunch can be as lavish or as simple as you’d like, but keep Mom’s tastes in mind. Make sure you have the menu planned ahead of time. And go to the market as soon as you can, to make certain all ingredients are available. Also, expect the unexpected: Uninvited guests, a burned dish, shortage of ingredients and plan accordingly.

Our Favorite Brunch Ideas - Simple and Delicious
A classic brunch menu is usually a mix of breakfast and lunch foods such as egg dishes, bacon or sausage, pancakes and French toast, light sandwiches and fruit salads.
To make life easy you can also serve up a mix of homemade items plus a few nice store-bought goodies (bagels, coffee cakes). Then throw in some fruit smoothies or light cocktails and you’re in business.

Classic French Toast
Our version of classic French Toast. Like most of our recipes, this one offers hard-working dads (and aspiring kid chefs) a way to serve up something that's both scrumptious and simple to make!
Ingredients
- Thick cut French bread, challah, or cinnamon bread
- 3 eggs
- 1 1/4 cups milk
- 1 teaspoon vanilla
- 1/2 teaspoon salt
- Ground cinnamon
- Butter or margarine
- Powdered sugar
- 1 small container fresh blueberries, washed
- 1 small container fresh strawberries, washed and quartered
- Maple syrup
Preparation
- Beat eggs in a bowl.
- Beat in milk, vanilla, salt and cinnamon.
- Soak thick cut bread slices in bowl for approximately 10 seconds. Don't let the bread soak all the way through.
- Grease frying pan or griddle with butter or margarine.
- Cook bread slices on both sides for 2-3 minutes or until light golden brown.
- Sprinkle powdered sugar lightly on each piece.
- Garnish with strawberries and blueberries.
- Serve with warm maple syrup.
Very Blueberry Pancakes
Pancakes are a lot easier to make than you think! And it doesn't get much better than fresh blueberry pancakes on Mother's Day.
Ingredients
- 1 egg
- 1 cup all-purpose flour
- 3/4 cup milk
- 1 tablespoon sugar
- 2 tablespoons vegetable oil (we prefer canola oil)
- 3 teaspoons baking powder
- 1/2 teaspoon salt
- Butter or margarine
- 1/2 cup blueberries
Preparation
- Beat egg until fluffy.
- Beat in remaining ingredients just until smooth.
- Stir in blueberries
- Grease griddle with butter or margarine.
- Pour about 4 tablespoons batter onto griddle for each pancake.
- Cook each pancake until puffed up and dry around edges.
- Turn and cook other side until golden brown.
- Makes approximately 8-10 pancakes.
Note: Worried about making from scratch? No worries, just use a store-bought pancake mix, and add the fresh blueberries to the batter before placing on the griddle.
Fresh Fruit Salad
What combination of fresh fruits you put into the bowl is really up to you. A lot may depend on what looks best when you're at the market. Here is one of our favorite combinations:
Ingredients
- 1 pint fresh strawberries, sliced
- 2 pints fresh blueberries
- 2 bananas, sliced
- 1 pint fresh raspberries
- 2 fresh peaches, sliced
- 1 cup red grapes
- 1 cup watermelon cubes
- 2 kiwi fruits, peeled and sliced
- Plain, vanilla or strawberry yogurt
- 1/4 cup Grand Marnier (or if you prefer, 1/4 cup orange juice)
Preparation
- Mix yogurt and Grand Marnier or orange juice in a bowl.
- Add fruit, gently toss until fruit is coated with liquid.
- Chill for 20 minutes, and serve.
Fruit, Yogurt and Granola Parfait
This one couldn't be any simpler, yet it's as elegant as it is easy to make! We strongly suggest using clear glass bowls or cups for this recipe. IF you don't have anything like that, you can be clear plastic cups at any grocer that are perfect for this dish (and then, you don't have to wash up).
Ingredients
- 32 oz. (or similar size) plain, vanilla, blueberry or strawberry yogurt
- Small package of your favorite granola mix
- Fresh blueberries, strawberries and/or blackberries
- Mint leaves (one per cup)
Preparation
- Place a layer of yogurt in the bottom of the cup (approximately 1/2 to 3/4 inch).
- Add a layer of the fresh fruit of your choice.
- Add a layer of granola (approximately 1/2 inch).
- Repeat until you have at least two layers of each item, with yogurt on top.
- Add a final topping of fruit.
- Garnish with mint leaves.
- Serve immediately (so that the granola doesn't get soggy).
Banana Bread
Our version of classic French Toast. Like most of our recipes, this one offers hard-working dads (and aspiring kid chefs) a way to serve up something that's both scrumptious and simple to make!
Ingredients
- 1 cup sugar
- 1/3 cup butter or margarine, softened
- 2 eggs
- 1 1/2 cups mashed, ripe bananas (3-4 bananas)
- 1/3 cup water
- 1 2/3 cups all-purpose flour (do NOT use self-rising flour)
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 teaspoon baking powder
- 1/2 cup finely chopped nuts (if desired) - walnuts are our favorite for this recipe
Preparation
- Heat oven to 350°.
- Grease bottom of loaf pan (not sides) - approximately 9 x 5 x 3 inches.
- Mix sugar and margarine in 2 1/2 quart bowl.
- Stir in eggs until blended.
- Add bananas and water.
- Beat for 30 seconds.
- Stir in flour, baking soda, salt and baking powder.
- Once mixture is smooth, add nuts.
- Pour into pan.
- Bake until wooden tooth pick comes out clean from top center of bread (approximately 55-65 minutes).
- After 5 minutes, loosen sides from pan and remove from pan.
- Allow to cool completely before slicing.
Warm Ham, Egg and Cheese Croissant Breakfast Sandwich
Another dish that is impressive, tasty and relatively easy to put together. Forget McDonald's: This is the real thing!
Ingredients
- 4 fresh croissants (buy from your local market)
- 4 slices of your favorite deli ham
- 1/2 cup swiss or cheddar cheese, diced
- 4 eggs
- Butter or margarine
- Salt
- Pepper
- 1 tomato, quartered
- 2 bananas
Preparation
- Slice croissants.
- Slice or dice ham.
- Slice or dice cheese.
- Beat eggs in a bowl.
- Grease frying pan or griddle with butter or margarine.
- Pour egg mixture onto frying surface in four separate "egg dots" (like pouring 4 pancakes, or making small omelettes).
- Add 1/4 of chopped ham and 1/4 of chopped cheese onto each egg dot.
- Note: You may want to toast the croissant halves while cooking the eggs, ham and cheese (next step).
- Cook each egg dot until egg is just firm, then fold into thirds like a crepe.
- Remove from frying surface and place on croissant half.
- Salt and pepper eggs to taste.
- Cover with other croissant half.
- Garnish with tomato wedge and 1/2 banana.
- If you like, also serve with bacon slices, or sausage.
Egg and Vegetable Burrito
Our version of classic French Toast. Like most of our recipes, this one offers hard-working dads (and aspiring kid chefs) a way to serve up something that's both scrumptious and simple to make!
Ingredients
- 4 10-inch flour tortillas
- 2 tablespoons canola oil
- 1/2 red onion, diced
- 1 green bell pepper, cleaned and diced
- 1 red bell pepper, cleaned and diced
- 1 large or two small tomatoes, diced, seeds removed
- 1/2 pound ground turkey sausage (optional)
- 6 eggs
- 2/3 cup shredded cheese (Chedder, Jack, Monterey or a combination of these)
- Salt and pepper
- Louisiana Hot Sauce
Preparation
- Warm tortillas moderately, according to instructions on package.
- Heat canola oil in large skillet.
- Brown onion and peppers lightly until slightly softened, and remove to large bowl.
- Flash fry diced tomato 10-15 seconds, remove from skillet, combine with onions and peppers.
- Brown turkey sausage (if used), drain off excess fat, and combine with onions, peppers and tomatoes in bowl.
- Beat eggs and add to heated skillet.
- Add cheese to eggs.
- Scramble egg and cheese mixture until eggs are cooked through.
- Remove eggs from skillet, place in separate bowl.
- Layer 1/4 of eggs onto each tortilla.
- Layer onions, peppers, tomatoes (and sausage if used) over eggs.
- Add salt, pepper and Louisiana Hot Sauce to taste.
- Roll tortilla into burrito shape, and place burrito flap-side down on plate.
Berry Berry Smoothie

Ingredients
- 1/2 cup blueberries, rinsed
- 1/2 cup strawberries, topped and rinsed
- 1/2 cup raspberries, rinsed
- 1 banana
- 1 cup ice
- 1 cup Odwalla brand "Mango Tango" Smoothie Blend - or - 1 cup pineapple juice
- 1/4 cup honey
Preparation
- Add ingredients into blender and blend until smooth.
Fuzzy Mimosa
Our favorite Mimosa recipe: The classic drink with a tasty twist!
Ingredients
- 2 oz. orange juice
- 1/2 oz. peach schnapps
- 4 oz. Champagne
- Thin orange slices
Preparation
- Combine orange juice and peach schnapps into a tall,
chilled champagne glass. - Tilt glass slightly and slowly pour in champagne.
- Garnish with fresh slice of orange.
